What is demineralised whey?

Demineralised whey is an ingredient produced by demineralisation of cheese whey. It is used in infant milk formula to improve the casein:whey ratio of cow’s milk, while limiting mineral contribution. Reducing mineral content enables a greater flexibility in formulations – for better control and accuracy. Demineralised whey also contains lactose, reducing the need to add this as a single ingredient later in the production process.
